More-ish chocky bikkies

This is what I had with my cuppa this morning:

The recipe was in the magazine in the Weekend Australian newspaper, first weekend in September. Fast and furious, no blender or mixer needed, and the bikkies turn out really well. They were contributed by a Mr David Herbert, and whoever he may be, I say thank you, sir!

Herbie's Chocky Bikkies with Kate's Adjustments


  • 125g dark choc
  • 125g unsalted butter

Melt these together in a small bowl over a saucepan of hot water, stirring occassionally, until smooth
  • 1 egg
  • 200g brown sugar

Beat together in a large bowl until well combined
Stir the chocky mix into the sugar/egg mix
180g self-raising flour, + 2 tablespoons of cocoa to make them even darkerSift and add to chocky mix, mix until smooth and thick
Roll mix into a long, skinny log, wrap in plastic wrap and refrigerate (or freeze if in a hurry) for 20mins
Slice small rounds off and space well apart on baking tray lined with baking paper
Bake 7-10 mins in mod oven (180*C)
Cool 5mins on tray before leaving on a wire rack to cool completely
